Because the weather is going to be cool for at least the next week, I thought I’d share a few more of my warming, vegan comfort food favorites from The Yoga Room Kitchen.
I was introduced to this recipe by a yoga student who made it for our yoga book club potluck last year. It was her first attempt at making something vegan, and it was awesome! I got the recipe and have been making it frequently since then. I will vary it up by adding things like sweet potato, cauliflower and/or tofu. The thing I like best about it: it is super-easy and super-quick to make! Sorry, the website I copied the link from doesn’t offer a good picture.
Fall-Apart Caramelized Cabbage
A non-vegan friend shared this recipe with me recently and suggested I just omit the yogurt or use vegan yogurt. (I did the former.) The flavors in this are INCREDIBLE! If you like coriander, you have to try this!
More coriander! Plus cinnamon and turmeric! The cinnamon and dried apricots give it a little sweetness, so it’s a unique change of pace.
