I’ve made a few yummy ‘Bowl’ and ‘Bite’ recipes lately (all vegan, of course!), and thought they were worth sharing. Let me know if you try them out. Enjoy!
BOWLS:
Cauliflower Shawarma Buddha Bowl – This bowl (pictured above) is admittedly a little labor intensive, but the flavors are so interesting that I promise it will be worth your while! One substitute: instead of cucumbers, I used pickles. The tahini dressing is just tahini, water, olive oil, lemon, salt and pepper.
Live Kindly Broccoli Butternut Squash Bowl – This one doesn’t have a link to the recipe. I saw it online from a tweet of some TV personality in Britain (who I wasn’t familiar with), but who just listed the ingredients: sauteed onions; sundried tomatoes; pumpkin seeds; raisins; brown rice; steamed broccoli; roasted butternut squash; cilantro; and a dressing of balsamic vinegar, olive oil, garlic and mustard. This one is the quickest and easiest to make of the three.
Fall Harvest Power Bowl with Spiced Maple Tahini Dressing – If you are ready for some cool weather, fall recipes, look no further than this bowl which has all your fall favorites like brussels sprouts, squash, kale and apples!

Peanut Butter Power Bites – This recipe comes from the book Brain Food by Lisa Mosconi, PhD. Quick, easy and good–especially if you add the dark chocolate chips! ;)
Chia Apricot Protein Balls – I got this recipe from a student who brought some in to share with me when she made a batch once. (Thanks Maria!)
