My Favorite *New* Plant-Based Recipes for Veganuary 2025

A year ago I shared some of my favorite new plant-based recipes for Veganuary 2024. Since I’ve been experimenting with even more great recipes over the past year, I wanted to share a few of my most recent finds with you here. Remember: you don’t have to go 100% vegan to make a difference. Eating even one or two nutritious plant-based meals a week still has a positive impact–for your health, for animals and for the planet.  Try out some of my new favorite plant-based recipes for cold weather months below–and let me know how you like them!

 

Chickpea Caesar Salad

As you can see from the picture above, this is a healthier (and more delicious!) version of the classic Caesar Salad, with ingredients ranging from sweet potato, cannellini beans, chickpeas, kale and apple to nutritional yeast, miso, tahini and more! A definite powerhouse of a salad.

 

Lemony Chickpea Soup

As the recipe states, this is a ‘bright and fresh, yet indulgent, soup.’ Chickpeas give it protein, and lemon,  coriander and turmeric give it great flavor.

 

Cozy Wild Rice Soup

One of my husband’s co-workers was kind enough to share some of this soup with us when she made it last year. (It makes a big batch!) I liked it so much that, of course, I asked for the recipe. I like to add a can of cannellini beans to it for more protein.

 

Thai Vegetable Massaman Curry

Finally, who doesn’t love a warming curry during the cold winter months? There are all kinds of delicious flavors going on in this recipe: red curry paste, peanut butter, coriander, curry powder, coconut and more! I add tofu for more protein, as well as play around with the quantity of certain spices to my liking. (Please note: I’m not a fan of the cooking instructions as written. I instead saute the onion and garlic first, add the spices, then the other base ingredients except chickpeas, plus the coconut milk. I let that simmer for about 25 minutes, then add the peas, chickpeas and tofu at the end.)
