Cuban Black Bean + Quinoa Bowl
We made this recipe with good friends when we visited them recently. We didn’t have plantains so we just subbed sweet potatoes. The original recipe calls for whole-milk yogurt for the cilantro sauce but we used coconut yogurt–and it was phenomenal!
If you like Indian food you’ll love this Dal recipe. It’s got tons of flavor! In fact, we halved the amounts of garlic powder and onion powder the original recipe called for. We used a whole can of coconut milk instead of the 1/2 cup the recipe called for (because what else were we going to do with the rest of the can?!?), and then adjusted the water accordingly. We also added cubed tofu and a can of chickpeas to supplement the protein in the red lentils.
I’ll admit that when I first looked at this recipe, it seemed rather unassuming. But putting mint in a red lentil soup intrigued me, and I happened to have some in my garden. Wow, such a nice flavor, and easy to make. Definitely don’t skip the mint!
I read that this recipe was inspired by Olive Garden’s famous recipe–but given a healthier update. This hearty soup is easy to make and loaded with kale and potatoes. The recipe calls for vegan sausages (we like Beyond or Trader Joes) or chickpeas, but we put in both when we make it!

Preserved lemon? Green olives? Sign me up! This recipe was shared by someone on my Facebook page when I put out a request for favorite plant-based recipes recently. To veganize this, replace the butter with olive oil, and try coconut yogurt to garnish.
Another Facebook follower recently shared the website that this recipe comes from with me. The Gambian Peanut Stew is excellent: easy to make, full of flavor, healthy and it gives you leftovers. What’s not to love?
