I was so excited to get some local asparagus this past week! (I’m a big believer in cooking with seasonal ingredients.) You’ll see it featured in a couple of the recipes below. Enjoy!
Creamy Mushroom Asparagus Pasta
I had this dish (picture above) last summer at a friend’s house up north and have been waiting for the past 11 months to be able to make it myself with local asparagus–alongside a nice glass of white wine! It is really nice and creamy with the vegan cream cheese. That said, we’re considering trying it with homemade cashew cream next time just to experiment. We’d also recommend cooking all the garlic (leaving some raw was a bit ‘much’ if you know what I mean) and adding more asparagus and mushrooms than the recipe calls for.
Cream of Asparagus Soup
OK, no link for this one as I have no idea where I got my recipe from. I’ve had it for years and, although it does actually call for soft silken tofu as the ‘cream’ it also calls for either chicken or vegetable broth, so it wasn’t originally a vegan recipe. However, I have no doubt if you do an online search for asparagus soup with silken tofu you will find some kind of easy and delicious recipe to try!
The official name of this recipe on the Minimalist Baker’s website is Baked Crispy Peanut Tofu. Mine did not get crispy following this recipe. (Next time I will saute the baked tofu in a little oil before adding the peanut sauce to see if that makes a difference.) The flavor was really good though. I served it with some steamed broccoli mixed in.
I saw the video for this recipe on Facebook. I thought it looked pretty good and pretty easy so we tried it out recently. I’m up for anything with tempeh–yum! We made it with quinoa, which is a nice substitute for rice. You could also add some additional vegetables like snap peas and purple cabbage, or whatever sounds good to you!
More tempeh, and a new favorite recipe! This is so quick and easy, and a nice mix of BBQ and Mexican flavors. Try it out and let me know what you think!
